Miller Walles used to grow sugar cane, one of the most labor-intensive, warm weather crops. It wasn’t until he purchased the farm La Morelia, 21 years ago, that he finally decided to leave sugar cane behind and pursue coffee. The switch to coffee was a life-changing move, as it proved capable of supporting his family in a way that sugar cane could not.
Miller started his farm from the scratch with the help of his wife, Dadny Salinas, and their oldest son, Rivaldo. When they arrived, the land was wild and unfertile. They decided to leave one part of the land as a protected forest reserve so as not to disturb the incredible biodiversity. Today La Morelia is planted with six different coffee varieties, on over ten hectares currently in production.
The ripest cherries are carefully handpicked at peak maturity and sorted by flotation to remove any defective fruit.
The cherries are then depulped and fermented in water to enhance the coffee’s complexity and clarity. Finally, the coffee is washed with clean water and slowly dried over 15 days to ensure stability.
