We are constantly working to introduce you to different regions through the “classic” washed Colombian coffee.
Edgar Gutiérrez and his son Heider purchased Finca Las Sombras in 2013. The farm is located two hours away from Chaparral, Tolima, the nearest town. One hour is covered on muleback, and the other by car to reach the town.
Edgar and his son have participated in several coffee events in Colombia, gaining a better understanding of the specialty coffee world and improving quality.
After manual harvesting, the ripe cherries are oxidized for 36 hours. Then they’re floated, washed, depulped and left to ferment for 16-14 hours, depending on environmental conditions. They are then sun dried and moved 4 to 6 times a day to ensure uniform drying. Once the coffee reaches the optimal drying point, it is stabilized and stored in a warehouse away from walls and ventilation.
