We first met Brayan in January 2025, and from the start, we admired his passion and determination to drive change among other producers in the region. We’ve been impatiently waiting ever since for his coffee to arrive in our roaster!
Brayan is a third-generation coffee grower from Huila, carrying forward his family’s legacy with both pride and ambition. He has embraced tradition while actively refining processing methods and cultivating new varieties to elevate the quality of his specialty coffees.
From an early age, he witnessed the dedication, discipline, and care his family poured into every harvest. Today, that same commitment guides his work—not only on his farm, but across his wider community.
Brayan now leads a coffee association in Huila focused on producing high-quality coffees with distinctive character. His passion extends beyond his own production: he works closely with small-scale farmers in the region, sharing knowledge, improving practices, and providing the tools needed to consistently produce exceptional coffee.
The ripest cherries are carefully handpicked at peak maturity and sorted by flotation to remove any defective fruit.
The cherries are then depulped and left to oxidise for 72 hours in open containers to allow the sugars and compounds to develop greater aromatic depth. This is followed by a 30-hour underwater fermentation process, designed to enhance the coffee’s complexity, structure, and clarity. Finally, the coffee is washed with clean water and slowly dried over 11 days to ensure stability.
