In a coffee scene full of fermented coffee, we fell in love with the clean cup profile
of this semi-washed coffee, where the variety’s typical brown and spicy notes balance
with the Huila region’s floral characteristics.
Back in the 1980s, during the height of the guerrilla conflict in the Caquetá region, Alfonso Rivas’s family were forced to migrate to the south of Huila. Shortly after the timber and cinchona boom, coffee cultivation began to gain popularity there.
His family learnt about coffee cultivation through trial and error. Over time, they gained the experience they needed to work as efficiently as possible with the fewest resources, and they continue to improve their techniques.
After being manually harvested, the ripe cherries undergo an initial selection process in water-filled tanks. They are then partially de-pulped and fermented with the mucilage for 24 hours. Finally, they are washed and dried on African beds.
